The Messermeister Oliva Elite Stealth Chef’s Knife is the workhorse of all the knives. You will gravitate towards it when executing 90% of your culinary tasks. The blades undergo heat treatment and cooling to achieve a Rockwell hardness of 57-58. Featuring a three-step, 15° Elite edge that is hand-stropped on a cloth wheel, the knife boasts the sharpest possible cutting surface. The bolsterless heel simplifies cutting, sharpening, and honing tasks by utilizing the entire blade from heel to tip.
