Twice Baked Ranch Potatoes

This recipe was sent to me by one of our top Toasty Fans, thank you Susie!  If you love potatoes and ranch... this recipe is for you! 


  • 16 ounce sour cream
  • Hidden Valley Ranch seasoning packet
  • Melted butter
  • Russet potatoes - 2-4 depending on size of potato and how much you want! 
  • Cheddar cheese 
  • *Optional bacon bits or fresh crumbled bacon 

Make It: 

  • Make Hidden Valley Ranch per packet directions
  • Preheat oven to 350°, rinse potatoes, prick a few times with a fork, wrap in foil, and bake for one hour 
  • When potatoes are done, rinse under cool water and peel those skins off or scoop out with a large spoon
  • Mash the potatoes with ranch dressing, melted butter and additional seasonings such as salt, pepper, garlic, or onion powder as desired (start off slowly with the ranch dressing and continue adding until desired consistency of potatoes)
  • Stir in bacon bits or fresh crumbled bacon 
  • Smooth potatoes into a casserole dish, top with as much shredded cheddar cheese as your heart desires and pop back into the oven for another 10+ minutes until cheese is bubbly and melty
