This speedy, fresh, breezy tortilla quiche is gonna rock your breakfast world! I always eat half and stash the rest for later. Just pop it in the air fryer at 350° for 5-8 minutes to bring back that crispy goodness!
Feel free to customize this easy quiche bake with your favorites or to use up ingredients you have on hand!
Ingredients:
- One large flour tortilla
- 3 eggs
- Spoonful of cottage cheese *optional or try a splash of milk or cream
- Topping ideas:
- Baby spinach or spinach torn into smaller pieces
- Kale
- Chopped tomatoes
- Chopped pepperonis
- Cooked and crumbled sausage or bacon
- Cooked Chorizo
- Red or green onion
- Diced peppers, any color
- Cheese! Mozzarella, Colby Jack, Pepper Jack, Parmesan... you get the idea
- Seasoning ideas:
- Salt & pepper
- Seasoned salt
- Smoked paprika
- Chili powder
- Garlic powder
- Basil
- Oregano (or Italian seasonings)
- Toasty Favorite Combinations:
- Smokey Mexican Vibes
- Chopped yellow peppers, Chorizo or breakfast sausage, chili powder, seasoned salt, garlic, oregano and Colby or Pepper Jack
- Classic Italian
- Chopped spinach, tomatoes, s&p, basil, oregano, mozzarella, and parmesan cheeses
Make It:
- Spray one side of the flour tortilla with cooking spray and lay (sprayed side down) into a 9" pie pan / dish. This will create a little bowl.
- Whisk eggs and cottage cheese in a small bowl and pour into tortilla bowl.
- Sprinkle toppings on!
- Bake at 350° for 15-18 minutes or until middle is set *eggs are set when they start puffing up and are not jiggly when given a little shake
- Let rest for a couple minutes. Slide the quiche onto a large plate or cutting board. Cut into 4 or more pieces and enjoy!
