Wrapping in bacon helps retain moisture while providing that wonderful salty extra flavor boost that only bacon can provide!
Some of my favorite ways to use shredded pork:
- Baked potatoes topped with baked beans, shredded pork, shredded cheddar cheese, red onion, and sour cream - YUM
- Layer tortilla chips on a baking sheet, and top with shredded pork, black beans, red onion, and nacho cheese. Bake at 350° until hot (about 15 minutes) - serve with all the toppings! Sour cream, salsa, rotel, fresh chopped tomatoes, shredded lettuce, guacamole... you get my point.
- Tacos! Make a crunchy and fruity slaw to throw on some corn tortillas with your shredded pork for a street style taco at home
- For the slaw: Finely sliced red cabbage, chopped pineapple (or mango!), diced jalapeno and red onion - splash of sugar, salt, pepper, and lime juice to taste. Let sit in the fridge for a couple hours to incorporate flavors. I try to make this the night before.
Ingredients:
- 3 pounds pork loin
- liquid smoke
- 1 pound bacon
Make It:
- Cut pork loin into quarters and rub generously with the liquid smoke
- Wrap each quarter with bacon and cook in slow cooker for 7-8 hours
