Shredded Pork Loin with Bacon

Shredded pork is one of those versatile meats that can create so many different meals, and usually makes so much you can get at least two recipes out of it!  Make sure your pork is fully thawed (I know, I know, that means remembering to take it out of the freezer and put in the fridge daaaays in advance) but it's so worth it to allow for even cooking of the meat.  

Wrapping in bacon helps retain moisture while providing that wonderful salty extra flavor boost that only bacon can provide!

Some of my favorite ways to use shredded pork:

  • Baked potatoes topped with baked beans, shredded pork, shredded cheddar cheese, red onion, and sour cream - YUM 
  • Layer tortilla chips on a baking sheet, and top with shredded pork, black beans, red onion, and nacho cheese.  Bake at 350° until hot (about 15 minutes) - serve with all the toppings!  Sour cream, salsa, rotel, fresh chopped tomatoes, shredded lettuce, guacamole... you get my point.  
  • Tacos!  Make a crunchy and fruity slaw to throw on some corn tortillas with your shredded pork for a street style taco at home
    • For the slaw: Finely sliced red cabbage, chopped pineapple (or mango!), diced jalapeno and red onion - splash of sugar, salt, pepper, and lime juice to taste.  Let sit in the fridge for a couple hours to incorporate flavors.  I try to make this the night before.  

Ingredients:

  • 3 pounds pork loin
  • liquid smoke
  • 1 pound bacon

Make It: 

  • Cut pork loin into quarters and rub generously with the liquid smoke
  • Wrap each quarter with bacon and cook in slow cooker for 7-8 hours
