Yes! You're only 25 minutes away from away from a crispy on the ouside, soft and pillowy on the inside baked potato. A good baked potato is a delicious stand alone side but can also be vamped up into the star of main dish! For example: I had some leftover steak and grilled brussel sprouts so I chopped it all up, tossed on top of this quick baked potato with some sour cream and cheese... heaven in my mouth! It almost reminded me of a corned beef and cabbage spin off with all the soft chopped brussel sprouts and potato mixed together.
Ok! So the biggest tip I have is par-cooking your potato in the microwave before finishing off in the air fryer. Here's how we do:
- Scrub a potato (russet works the best for that classic baked potato vibe).
- Using a fork, poke several holes around the potato, place on microwave safe plate (leaving it wet).
- Microwave on 50% power for 5 minutes. If you can remember, flip the potato halfway through the cook time.
- Carefully (your potato will be HOT) spritz some olive or avocado oil onto the potato and sprinkle with salt or kosher salt
- Air fry at 400° for 20 minutes
- Enjoy your perfect quick cooked bake potato with all the toppings your creative soul can come up with!
