I attended elementary school at a small church in upstate New York. I'm talking so small the second and third grades were combined into one room with one teacher. I'm not sure if this was norm back in the day, or if it was just our school having more freedom due to be small and private, but about once a month or so all the parents would bring in food for the class to have our own pot-lunch!
This is where I pay my mother credit for making me popular in second grade. All the kids went nuts over her simple pizza muffins! Those little halved English muffins slathered in sauce, cheese and pepperonis were the most sought after items on the pot-luck lunch table by far. And when the next pot-luck rolled around, the kids were real nice to me with pleading whispers to tell my mom to bring in those pepperoni muffins again.
So of course I make pizza muffins for my own two boys! And before you scoff about why anyone needs a written recipe for a pizza muffin... sometimes people need a reminder as to why adding a good old classic is a good idea.
The Ingredients:
- 1 (or 2!) package English muffins
- Pizza Sauce - homemade or jar
- Toppings!! Throw out whatever meats, cheeses, and veggies you have on hand and let the kids go crazy making their own special pizza
Make It:
- Preheat oven to 350 degrees
- It may seem pretty straight forward but unless you want semi-soggy muffins you'll want to give them a quick toasting prior to topping them. Halve the muffins and toast them in your toaster oven or the preheated oven
- Top, bake until cheese is bubbly and starting to brown
- Enjoy
