Throwback Thursday - Chocolate Chip Cookie Blondies

Ingredients:

  • 1 cup unsalted butter, melted
  • 1 3/4 cups light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease or line a 9x13-inch baking dish with parchment paper.
  2. In a large mixing bowl, combine the melted butter and light brown sugar. Stir until well combined.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
  6. Fold in the chocolate chips, reserving a handful for topping if desired.
  7. Pour the batter into the prepared baking dish, spreading it out evenly.
  8. If desired, sprinkle the reserved chocolate chips on top of the batter.
  9. Bake in the preheated oven for about 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with a few moist crumbs.
  10. Remove from the oven and let the blondies cool completely in the baking dish before cutting into squares.
