Quick Sausage, Beans, and Rice

When I tell my 8-year-old we're having sausage, rice, and beans he literally yells "YEEEESS!" I get the daily question "What's for dinner?" from someone in the family at some point after school and, depending on who's asking, I'm either excited to announce what's on the menu or cringe because I'm going to get some backlash.  Usually that only comes from the 4-year-old, ha! 

This recipe utilizes turkey sausage and kidney beans which makes this all-in-one skillet dish hearty, healthy and delicious.  

Ingredients: 

  • 1 box Spanish Rice-a-Roni
  • 13 oz turkey sausage link slice into bite sized pieces
  • 1 can dark or light kidney beans drained and rinsed 
  • 1 can diced tomatoes 
  • Shredded cheddar for topping 

Make It:

  • Preheat deep skillet, add a drizzle of olive oil and sliced turkey sausage.  Once you add the turkey sausage try not to over stir!  Let them sit for a few minutes on each side to get a nice crispy, browned surface on each piece.  
  • Remove from skillet and set aside.
  • Add a smidgen of butter or more olive oil and the rice.  Toast the rice for a few minutes until rice starts getting browned. 
  • Slowly add in 2 1/4 water (what the box calls for), and stir in the seasoning packet and can of tomatoes. 
  • Once those are stirred together, sprinkle the can of beans on top and then do the same with the sausage, and put the lid on.  Don't stir in the beans and sausage because you want to ensure your rice stays emerged in the water to cook properly!  By adding them on top with the lid, they'll get warm and add flavor while cooking without disturbing the rice.  
  • Cook on medium low for about 14-15 minutes, then feel free to stir!!  Continue cooking until rice has absorbed most of the liquid and is cooked through.  
  • Top with shredded cheddar to your heart's desire and pop that skillet under the broiler for a few minutes to get the cheese super melty and a little browned.  Feel free to skip this step and melt the cheese by placing the lid back onto the skillet to let melt.
