Instant Pot Chicken Fajitas

Chicken fajitas are so versatile and customizable!  Making them in an instant pot or pressure cooker gives you a chance to whip up some sides or toppings like guacamole, Mexican or cilantro lime rice, 

Ingredients: 

  • 2 chicken breasts halved
  • Variety of peppers and onions! Green, orange, red, yellow (don't care for green peppers? Try swapping out for Poblano peppers.) Yellow or white onions. 
  • 1 can of diced tomatoes with green chilies (Rotel)
  • 1 packet of taco seasonings 

Make It: 

  • Slice the peppers and onions in decently large slices (they'll get pretty soft and shrink while cooking) - place in the pressure cooker 
  • Layer the chicken breasts on top of the veggies
  • Sprinkle the entire packet of taco seasonings on top of the chicken and veggies
  • Dump in can of Rotel
  • Cook on high pressure for 12-15 minutes, let natural release for a few minutes and then quick release
  • Carefully pull out chicken and let rest for 5 minutes 
  • Slice into fajita length slices (or shred if you'd like!) 
  • Mix chicken back in the pressure cooker with the veggies and stire
  • Pull everything out with a large slotted spoon to serve up in a large bowl (there will be a lot of liquid left so try to leave the liquid behind!)
