Chicken fajitas are so versatile and customizable! Making them in an instant pot or pressure cooker gives you a chance to whip up some sides or toppings like guacamole, Mexican or cilantro lime rice,
Ingredients:
- 2 chicken breasts halved
- Variety of peppers and onions! Green, orange, red, yellow (don't care for green peppers? Try swapping out for Poblano peppers.) Yellow or white onions.
- 1 can of diced tomatoes with green chilies (Rotel)
- 1 packet of taco seasonings
Make It:
- Slice the peppers and onions in decently large slices (they'll get pretty soft and shrink while cooking) - place in the pressure cooker
- Layer the chicken breasts on top of the veggies
- Sprinkle the entire packet of taco seasonings on top of the chicken and veggies
- Dump in can of Rotel
- Cook on high pressure for 12-15 minutes, let natural release for a few minutes and then quick release
- Carefully pull out chicken and let rest for 5 minutes
- Slice into fajita length slices (or shred if you'd like!)
- Mix chicken back in the pressure cooker with the veggies and stire
- Pull everything out with a large slotted spoon to serve up in a large bowl (there will be a lot of liquid left so try to leave the liquid behind!)
